Pedro's Process

Harvesting
It takes a minimum of six years for Agave plants to reach full maturity.

Cooking
We slowly cook our harvested piñas in large ovens in order to convert starches and carbohydrates into fermentable sugar. Rest up to 48 hours.

Extracting
Then, carefully shredded juice is extracted creating our Mosto.

Fermentation
Our Mosto is inoculated with wild yeast and left to ferment for 12 days. Using deep well water from the Martinez family land and some rain water.

Distillation
Our tequila is double-distilled in traditional pot stills to separate the alcohol from impurities.

Aging
Blanco (unaged), Reposado (aged 6 months), and Añejo (aged over a year)
